GMHBA's resident nutritionist, Mel Bald, takes us through one of her go-to recipes for a simple weeknight dinner to feed the whole family – tuna and sweet potato burgers.
Ingredients
Makes six burgers
- 1 medium Sweet Potato⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 1 large can tuna (drained and flaked)⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 1/3 cup Almond Meal⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 3 Spring Onions (chopped)⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 1 Egg⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 1/2 tsp Oregano⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 1/2 tsp Paprika⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 1/2 tsp Sea Salt⠀⠀⠀⠀⠀⠀⠀⠀⠀
Method

Peel sweet potato and chop into large chunks and steam until cooked well. Transfer into a bowl and mash with a fork. ⠀⠀⠀⠀⠀⠀⠀⠀⠀

Preheat oven to 220ºC and line a tray with baking paper.⠀⠀⠀⠀⠀⠀⠀⠀⠀

Combine tuna, mashed sweet potato, almond meal, spring onions, egg, oregano, paprika and sea salt together in a bowl. Mix well. ⠀⠀⠀⠀⠀⠀⠀⠀⠀

Use your hands to form into even patties and place on the tray. Place in the oven and cook for 15 minutes. Once done, turn the patties, and place back in the oven for another 10 minutes.⠀⠀⠀⠀⠀⠀⠀⠀⠀

Serve and enjoy! Note: delicious with a bit of mayo on top.
