Baked fish with olives, tomatoes and capers

This vibrant fish dish is super quick and easy to prepare and is rich in omega-3 fatty acids which are known to support heart health and reduce inflammation. Tomatoes provide a potent dose of antioxidants like lycopene, adding to the health benefits – and colour – of this recipe. The addition of olives and capers further enhances the flavour.

Cook time: 20 minutes

 

Ingredients

  • 4 barramundi fillets (or any other firm white fish)
  • 250g punnet of cherry tomatoes
  • ½ cup green or black pitted olives
  • 3 tsp capers
  • 2 cloves garlic, crushed
  • 1/3 cup parsley, chopped
  • ½ red capsicum, deseeded and sliced
  • 3 tbsp extra virgin olive oil
  • 2 tbsp lemon juice
  • 4 slices of lemon
  • Steamed greens to serve

 

Method

  1. Preheat oven to 200°C.
  2. In a large baking dish, place tomatoes, olives, capers, garlic, parsley, capsicum, olive oil and lemon juice. Give it all a stir.
  3. Add the fish fillets on top of the mix. Sprinkle fish with salt and pepper and add lemon slices on top.
  4. Bake for 15-20 minutes (until fish is cooked to your liking).
  5. Divide the fish and olive and tomato mix between plates and serve with the steamed greens.
